Recipe for Filipino Bilo-Bilo

• 1 can (14 oz) coconut milk
• Instayum Frozen Glutinous Rice Balls
• 2 cups water (for the soup)
• 1/2 cup sugar (adjust to taste)
• 1 cup Instayum Frozen Sweet potato, diced
• 1 cup Instayum Frozen Purple yam (ube), diced (optional)
• 1 cup ripe Instayum Jackfruit strips (optional)
• 1 cup ripe Instayum Frozen Golden Saba Banana, sliced
• 1/2 cup sago pearls (tapioca pearls), cooked
• Pinch of salt

Cook the Soup:

• In a large pot, bring 2 cups of water to a boil.
• Add the sweet potato and purple yam (if using). Cook for about 5-7 minutes or until they start to soften.
• Add the coconut milk and bring to a gentle boil.
• Add the sugar and a pinch of salt, stirring until the sugar dissolves.
• Add the glutinous rice balls (bilo-bilo) into the pot. They will float to the surface once cooked, about 5 minutes.
• Add the plantain banana slices and jackfruit strips (if using). Cook for another 5 minutes
• Stir in the cooked sago pearls and mini tapioca balls (if using).
• Simmer and Serve:
• Lower the heat and let the mixture simmer for a few more minutes until all ingredients are cooked through and the soup thickens slightly.
• Serve warm in bowls. Enjoy your delicious Filipino bilo-bilo!
